Methode Traditionelle, Pinot Chardonnay
This premium, bottle-fermented sparkling is crafted from the traditional and iconic varieties of Pinot Noir (60%) and Chardonnay (40%). The fruit is selected from premium sites within the McLaren Vale wine region.
The grapes were gently pressed and fermented in stainless steel tanks and one year old French oak puncheons. Following blending and stabilization, the wine was bottled to undergo secondary fermentation. With over four years of maturation on yeast lees, the wine has developed complex toasty characters over notes of citrus. Elegant acidity balances the creamy palate and gives the wine great length.

Limited Release Sparkling Shiraz
The base wine for the limited release sparkling Shiraz comes from select vineyard sites throughout McLaren Vale, a region renowned worldwide for exceptional Shiraz fruit. This base wine used for the limited release sparkling Shiraz is matured in French and American oak puncheons. The barrels are tasted and only those most suited to sparkling base are used in the final blend.
The finished wine is an alluring dark garnet colour and displays great complexity and balance. Careful blending provides layers of fruit and toasty oak flavours supported by structured tannins and understated sweetness.
